Herb notes:

Coriander
The leaves of organic coriander can be used extensively in cooking. With their unique flavour they add an interesting taste to a whole host of foods, including fish, soups and meats. They have also been used as a folk medicine for the relief of anxiety and insomnia. Expect your plant to germinate in 7-14 days. Harvest when it reaches a suitable size.

Basil
Basil seeds produce a herb that can be used in countless ways. With its tangy taste, it's great with raw or cooked tomatoes, try sprinkling the chopped leaves over cooked vegetables or added during final cooking to soups. Mix chopped leaves with cream cheese or add whole to salads or pasta dishes. Expect the seeds to germinate in 14-21 days.

Chives
Garlic Chive seeds produce a lush crop. They should be finely chopped and added during the last few minutes of cooking so the delicate garlic flavour will not be destroyed. They are particularly good when added to scrambled eggs or omelettes and in all the ways that you would use onion chives. Expect the seeds to germinate in 14-21 days.

Oregano
Oregano seeds produce a plant that has a hearty and penetrating flavour. Its leaves are used extensively in Italian and Greek food. Try a pinch in an avocado dip -it will add relish, and in everyday cooking try it instead of thyme or mixed herbs on vegetables and meats. Expect your seeds to germinate in 14-21 days.

Mint
A classic culinary herb that has many uses - it can be used to enhance the flavour of many foods, or used in tea to make a refreshing brew. Medicinally it stimulates the digestive system, reduces flatulence and assists in cleaning the intestines. Expect the seeds to germinate in 14-21 days.

Mustard and Cress
Mustard and cress are often grown together, to provide spicy greenery as a garnish or for salads. Mustard seedlings usually germinate 3-4 days sooner than the cress, so initially your pocket garden may only show mustard seedlings. Cress has been grown for thousands of years, and was first known in Persia. There is a story that the Persians would always eat cress before they baked bread, and there are other references in antiquity to people eating cress with bread.


To ensure success with your pocket herb garden:

1) In the beginning, ensure the compost is damp and remember water is taken up by the compost at the outset - so water a little bit more initially.

2) Try not to overwater after the above. Waterlogged seeds will not germinate and, after germination, seedlings will die through excess moisture.

3). Make sure your Pocket Garden is not in a cold place; for example on a cold windowsill particularly behind closed curtains. Cold causes “damping off”.

4) Ensure your Pocket Garden has sufficient light.

5) Pay it regular attention! Water when it needs some, and talk to it occasionally (if you like).
